The Iverpan controlled ripening chamber with tray trolleys offers high production capacity, capacity up to 12 pan carts, and absolute control over the fermentation process. It is a flexible and easy to install solution, ideal for bakeries and pastry shops that use tray trolleys in their production. Thanks to Salva's advanced ripening control software, you can program multiple ripening stages fully adapted to your needs.
The SALVA FC series incorporates a cooling unit, electric heating elements and humidification system, allowing fermentation, controlled ripening or cold ripening with moisture. It is an air-conditioned space that can consist of one or more cells, designed for the introduction of storage or baking carts, ensuring perfectly controlled and programmed maturation of bakery and pastry doughs.
