Aging Processes

  • Immediate ripening
  • Controlled ripening (24h and 48h) for fresh or frozen doughs
  • Continuous delayed ripening (up to 24 hours)
  • Programmed delayed fermentation

Phases of controlled ripening:
Pre-cooling ➜ Freezing ➜ Preservation ➜ Fermentation ➜ Waiting

The standby mode (Snooze) gives you the possibility to delay the baking up to 3 hours after the end of fermentation.
